Vegan banana-nut breakfast bars - Recipe

I came up with this recipe last year when the bananas in my kitchen were getting beyond ripe.

I love how delicious yet nutritious and filling they are, perfect for breakfast or general snacking. This snack is vegan so no butter, milk or eggs and only natural sugars are used.




Ingredients

1/2 cup melted warm organic coconut oil

2 tbsp chia seeds

1/2 cup chopped organic dates

1/2 cup chopped walnuts

3-4 mashed medium size bananas

1 tsp organic vanilla extract

1 cup self-raising flour


Optional - 1 tablespoon of honey (not vegan) or maple syrup for extra sweetness


Method

1. Start by pouring your warm coconut oil into a bowl with the chia seeds, stir for a few seconds

2. Mix in the vanilla extract and mashed banana, whip the mixture so that you are keeping the air in

3. Once all of your wet ingredients are in the bowl, add walnuts, dates and fold in your flour

4. Pour mixture into a very well greased baking tray and bake for 30 minutes at 385 F/Gas Mark 5


Leave to cool then cut into squares or "bars" and enjoy with or without a good cup of tea. I hope you enjoy these bars as much as I do.
