That's right!
I have seen people make these online for years now and truthfully, I thought they were too good to be true.
Being at home for longer periods of time has definitely got me experimenting in the kitchen so I thought.. GO ON THEN!
I came up with some yummy Autumnal tasting pancakes and added my own little spin by adding some collagen to the mix.
You could call it a banana omelette but since that doesn't sound one bit appealing, banana pancakes it is haha
For 2-3 small pancakes
You will need
1 ripe banana
1 pasture raised egg
1/4 tsp cinnamon powder
1/2 scoop collagen powder (optional)
1 tbsp good quality maple syrup
2 tbsp organic coconut oil for cooking
Method
Simply mash your banana up in a bowl, add your egg, cinnamon powder and collagen.
Mix, Mix, Mix.
Make sure your cooking pan is on a medium heat. You want it nice and hot.
Dollop your mixture to make THREE pancakes, leave 1/4 of the mixture in the bowl.
Once they start cooking around the sides, add a spoon of the mixture into the middle of each pancake.
This will create a thicker pancake and the cooked sides keep the mixture from running.
Once the pancakes look like they have browned nicely, flip them over. Remember they are omelette like so be gentle.
Once cooked. Plate up and cover with maple syrup. V
Voila!
They are super delicious!
